Ingredients
- 4 oz. Korean sweet potato starch noodles
- 4 oz. beef sirloin, thinly sliced
- 1 medium onion, thinly sliced
- 1 small red bell pepper, thinly sliced
- 1 small carrot, julienned
- 3 green onions, cut into 2-inch pieces
- 3 cloves of garlic, minced
- 2 Tbsp. vegetable oil
- 1 Tbsp. toasted sesame oil
- 3 Tbsp. soy sauce
- 2 Tbsp. sugar
- 2 Tbsp. honey
- 2 tsp. sesame seeds
- Salt and pepper to taste
Instructions
- In a pot of boiling water, cook the sweet potato noodles for 5-7 minutes, or until they’re translucent and glass-like.
- Drain the noodles, rinse with cold water, and drain again.
- Cut the noodles into manageable lengths of about 6 inches.
- In a bowl, marinate the beef with minced garlic, 1 tablespoon of soy sauce, and a pinch of salt and pepper.
- In a skillet, heat vegetable oil over medium heat and stir-fry the beef until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add sesame oil and stir-fry the onions for 2-3 minutes until translucent.
- Add red bell pepper and carrot and stir-fry for 3-4 minutes until tender but still crisp.
- Add the noodles and the remaining soy sauce, sugar, honey, sesame seeds, and green onions. Stir-fry for another 2-3 minutes or until everything is well combined and heated through.
- Add the cooked beef to the skillet and stir-fry for an additional minute.
- Transfer to a serving dish and serve immediately.
